Quinoa, buckwheat, hemp seed, blue green algae and soybeans are the only vegetarian sources that provide complete protein. Protein encourages weight loss and increases your metabolic rate. It builds HDL or good cholesterol, helps improve the immune system and antioxidant and insulin functions. Here’s a delicious vegan power bar that contains the complete protein “hemp seed” and takes only minutes to throw together.
Apricot Almond Coconut Power Bars:
- 1/2 cup raw almonds
- 1 cup dried apricots*
- 1 cup shredded coconut
- 1/3 cup rolled oats
- 3 tablespoons honey
- 2 tablespoons coconut oil, melted
- 4 tablespoons hemp seed hearts
- 1 teaspoon ground ginger
- 1/2 teaspoon sea salt
Use a food processor to evenly chop your almonds, then set aside. Next toss apricots in the food processor and process for 3-4 minutes to finely chop. Add the coconut, oats, honey, coconut oil, hemp seeds, ginger and salt. Blend until mixture is evenly distributed. Add the chopped almonds and pulse until well combined.
Firmly press the apricot coconut mixture into an 8×8 baking pan. Cover the bars and place in a freezer for one hour. Cut into 8-10 rectangles and serve.
*Apricots are high in vitamin A, vitamin C, tryptophan and fiber, plus they’re just a bit lower on the glycemic index than other dried fruits.
